When mom is busy, cooking has to be quick n easy! Agree or not? Let me introduce you to a fast recipe that has health as well as taste and can be multi-purpose. It’s my version of North Indian Style Pan Fried Mix Vegetables AKA Tawa Sabji.

Preparation Time: 15-20 mins
Cooking Time: 10 mins
Diet: Suitable for vegetarians. Option to make Vegan.
Pre-preparations
- Wash, clean, dry and chop vegetables.
- I used potato, capsicum, carrot, cauliflower and tomatoes. You can add beans, corn as well.
- Keep Paneer AKA Cottage cheese out of the fridge.
- Make ginger-garlic paste and keep ready.
- Keep all the spices handy – coriander powder, cumin powder, garam masala, Paneer tikka masala, red Chilli powder, turmeric.
- Marinate all the vegetables in a mix of yoghurt, add salt as per taste and all the spices mentioned above. After marination, you can refrigerate it for 15-20 minutes (optional)
Actual Cooking:
- Add ghee AKA clarified butter to the pan. You can use oil too but I preferred Ghee because it will add a very nice aroma to the veggie.
- Add cumin seeds, asafoetida.
- After cumin seeds flutter, add a dash of turmeric, coriander powder, cumin seeds powder and ginger-garlic paste.
- Fry for a while and when you smell the aroma, add marinated vegetables.
- Stir fry for 2-3 minutes.
- Cover the pan with the lid. After 5-7 minutes, check and mix the vegetables well.
- After some minutes, check again and it should be done. I keep it a bit crunchy and don’t let it become too soft.
- Serve with hot Chapati, Prata (paratha) or Rice or Pilaf (pulao)
**** All the ingredients are easily available at any of the Indian stores around your residence.
Nutritional Values: Vegetables provide all the necessary nutrients like Vitamin A, B, K, Potassium, Iron. Paneer AKA Cottage Cheese is a great source of protein and spices have their own benefits like anti-inflammatory, help in digestion and so on. If you want to make a vegan variant of the same dish, use alternatives of ghee and paneer.

That looks delicious Shubhada. We really struggle to find ghee here in South Africa. There are only a few shops in certain areas that sell it and I do so love the flavor that it adds to a dish. It’s so much richer, if that’s the right word
